Cupcakes with Oat Milk

We’re seeing red, white, and blue! These flag cupcakes are a must-have for parties.

Makes 6 cup cakes

Ingredients

For the cupcakes:

110 grams all-purpose flour

60 grams white sugar

1/4 teaspoon baking soda

Pinch of baking powder

Pinch of salt

1/2 cup PIKOO Barista Oat Milk

1/2 tablespoon white vinegar

40 milliliters neutral oil

1 teaspoon vanilla extract

 

For the frosting:

1/2 cup vegan butter

1 1/2 cups sifted powdered sugar

1/2 teaspoon vanilla extract

Food coloring (purple, blue, and red)

White star sprinkles, optional

Directions

    Preheat the oven to 350 degrees F

    Combine 110g sifted all purpose flour, 60g white sugar, 1/4 tsp baking soda, a pinch of baking powder, and a pinch of salt.

    In a separate bowl, whisk together 1/2 cup PIKOO Barista Oat milk and 1/2 tbsp white vinegar, then set it aside for 5 minutes. Then, add 40ml neutral oil and 1 tsp vanilla extract

    Scoop the batter into a muffin pan lined with cupcake liners. Bake for 20-25 minutes depending on your oven
